The Cold Foam Latte is one of the cold coffee drinks we make at Crema House in Ottawa. It starts with espresso pulled to order, poured over cold milk and ice, then finished with a layer of cold foam across the top. The foam holds its shape at first and gradually settles down through the glass, so the first sips are lighter and the drink evens out as it goes. It is served cold, in a glass, and made one at a time at our bar. The espresso keeps the drink from going flat under the milk, and the foam gives it a softer surface than a plain iced latte. It pairs easily with pastries from our case.
