The blend.Chosen for the cup, not the invoice.

Blasercafé has roasted in Bern since 1922. Marrone is its dark espresso blend: 70% arabica for aroma and sweetness, 30% robusta for body and the thick hazelnut crema that tells you a shot was pulled properly. It is low in acidity and built for milk, which is why it works as well in a cappuccino as it does on its own.

We chose it by tasting, on our own machine, against the blends we could have bought more cheaply. It is the standard the rest of the house is measured against, and we sell it only as whole beans so it reaches you the way it reaches us.

  • Dark chocolateThe first thing in the cup: cocoa rather than sweetness.
  • Roasted almondThe nut note that carries into milk drinks.
  • GingerbreadWarm spice on the finish, from the darker roast.
  • Baked appleA soft fruit note underneath, never sour.

Who it is for.Home, office and trade.

At home

For espresso machines, moka pots and filter brewers. A 250 g bag is a fortnight of espresso for one; the kilogram bag suits a household that drinks it daily.

Grind just before you brew. Whole beans keep for weeks; ground coffee keeps for days.
At the office

The kilogram bag fits bean-to-cup and office espresso machines. A team that stops going out for coffee gets its afternoons back.

Set up a standing order and we will have it bagged for pickup on the same day each week.

Brew it well.Four starting points for Marrone.

  • Espresso18 g in, about 36 g out, in 25 to 30 seconds. Marrone likes a slightly finer grind than a light roast and rewards a warm cup.
  • Moka potMedium-fine grind, water just below the valve, low heat. Take it off the flame as soon as it gurgles.
  • FilterMedium grind, 60 g per litre, water just off the boil. Expect a heavier, chocolatey cup than a single-origin filter coffee.
  • With milkThe robusta share is why the blend holds up: it keeps its shape under steamed milk instead of disappearing into it.
