Napoleon Cake at Crema House is the whole-cake form of the mille-feuille, the French thousand-layer pastry, made in our Ottawa pasticceria. Sheets of puff pastry are baked flaky and golden, then stacked with a rich cream or a silky custard between them. The top is dusted with icing sugar and finished with pistachios, almonds or rose petals, depending on the day. It is crisp and cool at once, and it contains nuts, so it is not suitable for nut allergies. It is not vegan. It is best eaten the day it is collected, while the pastry is still crisp. Whole cakes need a day's notice, and pickup is at 14-1400 Clyde Avenue. Serve it with a pot of Classic Black tea, the Persian way, or with a Caffè Latte.
